Huaiyang Cuisine Atlas

Knife work, slow heat and seasonal ingredients in Huaiyang cooking, with 30 signature dishes.

Huaiyang cooking is judged less by spice than by cut and heat: tofu shredded into threads, dried tofu sliced into sheets, a fish scored so it opens like a pine cone. The flavor stays light and slightly sweet, built on stock rather than chili.

Flavor profile

Scores are relative tendencies from 1 to 5, not measurements.

Knife work: the real signature

Huaiyang chefs are trained on cuts before they are trusted with heat. These eight are the ones a menu will name.

Seasonal calendar

Huaiyang cooking follows the river: what is in season is what is on the table.

How to read a Huaiyang menu

If a dish name contains 丝, 片 or 丁, the cut is part of the dish. 大煮干丝 and 文思豆腐 are tests of knife work, not of seasoning.

Light does not mean bland. The salt level is moderate, but stock, lard and ham are used to build depth, so the dish still tastes complete.
